VIDEO: Vegan Granola Bars with Lion's Mane

Our favourite chef and dietician is at it again. This time Chef Abbie has whipped up these super healthy and tasty Vegan Granola Bars with Lion's Mane mushrooms.

Good for breakfast or as a snack on-the-go, you'll stay sharp and focused throughout your entire day with these delicious morsels of goodness. Hella good.



Ingredients:

3 cups rolled oats
1 cup chopped walnuts
1/4 cup unsweetened coconut flakes
1/2 cup dried, chopped apricots
2 teaspoon Lion's Mane mushroom powder
1 teaspoon ground cinnamon
1 tablespoon salt
3/4 cup peanut butter
1/3 cup maple syrup
1 teaspoon vanilla extract
1 tablespoon coconut oil

Mix the rolled oats, walnuts, coconut flakes, apricots, Lion's Mane mushroom powder, cinnamon and salt into a mixing bowl. Mix the peanut butter, maple syrup, vanilla extract and coconut oil together then heat it over a saucepan for 1-2 minutes. Give the ingredients a good stir then pour it over the dried goods. Mix them all together and pour into a glass dish. Firmly press into the pan and place in oven at 325 degrees for 25 minutes. Take out of oven and sit cool for 15 minutes before serving. Enjoy!
